We have adapted a terrace so that it features the elements of a true Amazonian kitchen — a clay oven and ceramic utensils. This way, the Cordillera Escalera Ecolodge guests can fully emerge into the life of Amazon indigenous inhabitants.

Now, we invite the clients and guests of the Ecolodge to book an evening gastronomic event called «Amazonian Dinner» in advance.

From our experience of communication with visitors, we already know that almost every tourist who comes to the Amazon for the first time begins with asking what is cooked here, and where it is best to try exotic Peruvian food.

Therefore, we decided to combine the useful and the pleasant not only by talking about the main dishes of the Amazonian cuisine but also teaching our guests to cook them. The workshops are held by Peruvian chefs.

So, what would we recommend that you try in the Peruvian jungle?
We would recommend fish dishes with the leaves of the bijao plant and mashed bananas with dried meat. And if you come in season, you will definitely offer you siquisapa ants roasted over a fire or skewers with larvae of the palm weevil.

At our «Amazonian Dinners», we tell our guests about local ingredients, share recipes and secrets of the indigenous cuisine and, certainly, explain how to drink unusual tinctures and cocktails.

Anticucho de SuriAnticucho de suri

Patarashka — is one of the main dishes of the Amazonian cuisine. It is made with a base of river fish, whole or fillet, and regional seasonings, such as coriander, pepper, aji charapita chilli, turmeric, etc. The fish is wrapped in a heat-resistant leaf of the bijao plant and cooked on embers. It is served with baked green plantain or fried yuca and spicy cocona sauce.

Anticucho de suri  — is fried, skewered and seasoned larvae of the palm weevil.

Siquisapa — is a dish made with fried ants.

The chonta salad — is a salad with a base of hearts of young palm trees (chontas). It is cooked with tomatoes, onions and lettuce leaves and seasoned with lemon juice.

Nina Juane — is a dish with a base of chicken or other poultry, prepared with whipped eggs and spices. It is cooked on embers. The poultry meat is wrapped in several layers of bijao leaves and served with boiled yuca.

Picadillo de paichi  — is chopped pieces of boiled fillet of paichi fish mixed with vegetables and seasonings. It is served with boiled yuca and hot charapita pepper.

Taсacho — is mashed and seasoned plantains mixed with smoked pork and formed into balls.

The dinner lasts one and a half hours:
it’s enough time for each participant to get into the roles of both the cook and the taster. At the same time, they will be able to fully feel the atmosphere of a typical Amazonian evening — we have done our best to create an absolutely authentic environment.

The dinner venue — is a cozy chosa covered with palm leaves. It is a typical Amazonian hut where we installed a small stove and a grill.

The entire interior of the chosa is made from local materials in the traditional style. It features wooden decorations, seeds, paiche fish scales and handwoven tablecloths. Event hosts wear traditional clothes and hold the dinner according to all the rules.

All in all, you are going to have an authentic Peruvian family dinner while listening to stories about the jungle and its inhabitants. What is more, natural background music is expected — cicadas start their trills just in time to make an accompaniment for the dinner.

Music will also sound in our chosa — namely recordings of local folk orchestras, in which musicians play national instruments: the drums, the flutes and the rattles.
